I have to start this post with a confession (#1). I did not have breakfast today (gasp)! Yes,yes I know it is the most important meal of the day, but I woke up late and just never got around to it. It’s a shame really because there are tons of great smoothie recipes out there I’ve been wanting to try.
Here’s what I did eat. Fabulous leftovers of quinoa lasagna from the night before. This recipe is a staple at my house, and it reheats really well. I altered it this time by adding some pepperoni, which kinda gave it a pizza-like feel.
For dinner we warmed up with my favorite Crockpot Soup recipe. It is a copycat recipe of Olive Garden’s Zuppa Toscana, and I actually like it better than Olive Garden’s original! It’s light yet hearty, makes a ton, and warms you up so its perfect for a fall or winter day. I will say it takes a while to prep the Crockpot so it’s not a fast one I can whip together before work unless I give myself a lot of time. And who has that in the morning?

Confession #2 I may have snacked on leftover Halloween candy throughout the day until I finally threw it away. Much too tempting!!
